My husband turned vegetarian a few years ago but he always had a soft spot for seafood and especially a classic fish pie. I’m a huge fan of pies but I have to say the vegetarian options on offer in most places are pretty depressing – they really don’t have to be! I often see leek and potato pies on menus/in stores and I never want to give it a go because it sounds so bland and boring. But curiosity got the better of me so I decided to experiment a bit and make my own with some roasted sweet peppers to bring colour and excitement to a creamy leek and potato pie.

Everyone (I assume) loves a good puff pastry treat once in a while and I love this one with mushroom, spinach and ricotta. I think I was inspired by a ravioli I had and wanted to incorporate pastry into it somehow. These are super quick and easy to make and you can have them as a side or a main. I’ve done them here as a main with salad.
