Aloo Gobi (Curried Potato & Cauliflower)

Aah, aloo gobi – I dare you to find someone who has a bad word to say about this classic Indian dish! It’s light, it’s delicious and actually pretty easy to make so if you haven’t tried your hand at it already, add aloo gobi to your menu now. This is just my take on the dish so I make no claims that it’s ‘traditional’, though who knows what that really means?! If you’ve got a few basic Indian spices in the cupboard, (perhaps from trying my spinach dal recipe?) then this will be an easy recipe to follow. Serve with some warm chapati or naan and you’re solid!

Potatoes are undeniably one of my top comfort foods because they work in any form: fried, mashed, curried, you name it. I always hesitated to mash potatoes because it seems like so much effort but when I got a hankering for Ikea’s meatballs with mash, I just had to make it happen. Let me tell, you it was well worth it and actually not much more effort than the usual meal. I’ve been obsessed with Linda McCartney’s tomato & basil vegetarian meatballs as well so the stars really collided on this one. Tuck in!

I’m a huge fan of pies but I have to say the vegetarian options on offer in most places are pretty depressing – they really don’t have to be! I often see leek and potato pies on menus/in stores and I never want to give it a go because it sounds so bland and boring.
