Chunky Monkey Crepes

Let’s be honest, it’s really difficult to find a Ben & Jerry’s ice cream flavour that you don’t like and I’ve been loving the Netflix & Chill’d ice cream they came out with recently (very appropriate for life in 2020). I then remembered the iconic Chunky Monkey flavour they’d done and got hit with the idea of Chunky Monkey crepes – so good!


Ingredients

Makes 6 large crepes

1 banana, sliced thinly

Your choice of caramel/fudgy/chocolate sauce (I melted down some salted caramel Lindor)

Handful of crushed pecans}

Peanut butter (for spreading on)

Crepe batter

180g plain flour

300ml milk (+/- 50ml)

1 large egg

1 tsp sweet cinnamon

1 tbsp caster sugar (optional)

10g unsalted butter, melted


Method

Mix together all the dry ingredients for the crepe batter and crack in the egg.

Slowly add the milk, stirring as you go so you can get the right consistency. For crepes, the batter should be runnier than for pancakes.

Add in the melted butter and stir well until everything is combined.

Put a pan on medium-low heat and get your crepes cooking. This batter made about 7 medium ones.

Filling time! Spread a thin layer of peanut butter on one half and add some sliced bananas.

Then drizzle some of your melted chocolate on for the ‘fudge’ part of the Chunky Monkey.

Top off with some crushed pecans (should strictly be walnuts but there are no rules here).
