
Spiced Baileys Hot Chocolate
It’s finally acceptable to indulge in festive hot chocolates! Fair warning, this hot chocolate is not for the faint hearted or those who have ambivalent feelings towards chocolate (monsters). I have a very low success rate with powdered hot chocolates and I feel they’re often not rich or velvety enough to be indulgent. So this recipe has both cocoa powder and real chocolate for that luxurious texture you know you need for a Christmassy hot chocolate. Enjoy!
Ingredients
Serves 2
2 cups milk (or milk substitute)
50g dark chocolate
1.5 tbsp dark cocoa powder (I recommend Green & Blacks)
30ml Baileys Irish cream
2 squirts of honey (or golden syrup or agave nectar)
1 tbsp of ground mixed spice (cinnamon, coriander, dill, ginger, cloves & nutmeg)
Sprinkle of salt
Optional toppings: whipped cream and marshmallows!
Method
Gently bring 2 cups of milk to a boil. Just before it’s about to simmer, add in your cocoa powder and stir well to dissolve.


Take the pan off the heat and add in your dark chocolate, broken into chunks. Stir well until the chocolate is fully melted and incorporated.


Add in your mixed spice (more or less depending on how strong you want it) and salt.

Pour the hot chocolate into two mugs and add in 1 squirt of honey or golden syrup into each mug. Also pour in 15ml each of the Baileys. Stir well.
Add your whipped cream and marshmallows on top and take to your nearest festive backdrop!
