Harissa Fried Eggs
I’ve been really curious about harissa paste after seeing it on a few foodie Instagrams so I thought I’d give give it a go with some eggs for a Saturday breakfast treat. It was so good and added just the right amount of kick to eggs on toast!
Ingredients
Serves 1
2 eggs
2 slices of sourdough or bread of your choice
Harissa paste
2 tbsp crumbled feta (optional)
2 tbsp chopped spring onion
Salt and pepper to taste
Method
Lightly toast some bread with butter in a pan. This is bit of personal preference because I just feel like it tastes better this way but you can just stick it in the toaster to be honest!
Spread on a thin layer of harissa paste to the bread and put aside.
Now crack two eggs in a pan with some olive oil. Sprinkle on some salt and pepper as well as half the chopped spring onions.
Pop the fried eggs on to your harissa toast and put your toppings on. I’ve crumbled some feta and dolloped some more harissa paste on top. Garnish with the last of the spring onions.
